At Home: Grated Zucchini Soup for a Cosy Sunday Afternoon
When my daughter asked me to make her lunch, I wanted to make her something that she wouldn't make, but also something soothing and homey. This recipe is what I came up with.
This is a wonderful recipe for an easy lunch soup for one of those raining days in summer, when the zucchini (courgette) is in season but the weather is not. Serve with bread and butter and a fresh tomato salad.
Serves 4
Ingredients:
- 2 small onions
- 1/4 olive oil
- 3 cloves of garlic
- 2 large courgette
- 2 teaspoons herbes de provence
- salt and pepper
- 2 vegetable bouillon cubes
- 1/2 grated gruyere cheese
Directions:
- Chop the onions
- Heat the oil in a heavy pan at least 4” deep.
- Salute the onions over medium heat.
- Chop the garlic finely.
- Add the garlic and the herbs to the onions and sauce over slightly lower heat.
- After cutting the ends off, grate the courgette. Add to the pan and cook for 15 minutes.
- Season with salt and pepper and add the 2 bouillon cubes while this is cooking.
- After the 15 minutes, add 2 cups of hot water and let simmer for 20 minutes.
- After ladling into bowl, top with the grated gruyere cheese and serve.
